korean egg breakfast taco
Mmm, this has been one of my go to breakfasts, after having an excess of green onions!
Step by step photos would be helpful in this case, but here goes!
Crispy Egg Tortilla
Ingredients
1 tbsp neutral oil
Crunchy garlic chili oil (to taste)
1 clove garlic, chopped (optional)
Dash sesame oil
Small spoon gochujang
Sesame seeds
1–2 tbsp thinly sliced white onion
1 green onion, sliced
1 egg
1 tortilla
Sriracha, Kewpie mayo, furikake, extra green onion (for topping)
Instructions
Heat oil in a pan. Add crunchy garlic oil, garlic, sesame oil, gochujang, and sesame seeds. Cook 1–2 minutes.
Add white onion and green onion; sauté until softened.
Spread onions thinly and create a small “nest” in the center. Crack an egg into the nest.
Lay tortilla on top of the egg gently.
Flip so the tortilla is on the bottom and the egg is on top. Cook until tortilla is crisp.
Top with sriracha, Kewpie mayo, furikake, and extra green onion. Enjoy.
